Sorrel Ricotta Crostini

These easy-peasy Sorrel Ricotta Crostini is fresh and a cinch to whip together! With a creamy citrus sorrel and ricotta purée, herbaceous olive oil, and citrus flare, these crostini taste like a big bite of spring!

Ingredients:

1 baguette or sourdough bread from – sliced thinly

2 tbsp extra virgin olive oil

1 to 2 handful of Ortaliza Micro Sorrel 

1 clove garlic 

1 cup of ricotta cheese 

½ cup of parmigiano cheese, grated, plus more for topping

1 tbsp lemon juice

¼ tsp salt

1/8 tsp black pepper

lemon zest to taste

How to:

Toast crostini in the oven on a baking sheet.

Add all ingredients to a food processor and mix well.


TIP: rub garlic on the toasty bread before spreading ricotta mixture on crostini.  

Drizzle more olive oil and sprinkle parmigiano cheese on top.
