Perogies with Green Pea and Zucchini Sauce

Jazz up your perogies with a healthy green pea and zucchini sauce đź’š
This silky, creamy and deeply flavoured green sauce will have you puzzled on why it took you so long to discover.
This sauce is so healthy, full of green veggies like zucchini, spinach, green peas and fresh basil. It’s vegan, nut-free, high in fiber and protein.
4 Servings
Ingredients:
1 tbsp olive oil
1 small onion, chopped
4 garlic cloves, chopped
1 zucchini, chopped
1 cup spinach
1.5 cups frozen green peas
½ tsp salt
â…“ cup nutritional yeast
ÂĽ cup fresh lemon juice
1 cup plant milk (soy or rice milk, preferred)
½ cup fresh basil microgreens from Ortaliza
â…“ cup hemp seeds
1 tsp miso paste (optional)
â…› tsp black pepper
How to:
Heat olive oil in a medium pan. Once hot, add the chopped onion and cook for 3-4 minutes then add the garlic and cook for another 1-2 minutes. Next, add the zucchini and cook down for about 7-minutes or until the zucchini is cooked. Stir in the spinach and green peas until the spinach is wilted. Remove from the heat and set aside.
In a blender, add the cooked veggies and all the remaining ingredients. Blend until completely smooth.
You can add this sauce to your vegan onion & potato stuffed perogies, or to any pasta noodle, in a vegan rice bowl, spread on flatbread or anywhere else you can think of!
